Acid value and peroxide value are routine indicators of how far an oil or fat has oxidised, and both are measured here on a single automatic potentiometric titrator. HM-DAP is designed for the precise determination of acid value and peroxide value in food: acid value is measured by cold-solvent automatic potentiometric titration and peroxide value by potentiometric titration, with national-standard programs for both already installed. Automatic endpoint recognition supports one-click testing, and a general titration mode remains available for other potentiometric titrations.
Typical users are food producers monitoring frying oil and finished goods, quality inspection agencies, and research institutes studying the oxidative stability of oils and fats. The instrument is operated from an Android 10 interface with a 7-inch colour touch screen and stores results locally with an audit trail.

Method conditions for the two determinations are as follows. Acid value (cold-solvent automatic potentiometric titration): the oil is dissolved in isopropanol and anhydrous ether (1:1), free fatty acids are neutralised with potassium hydroxide standard solution, and the endpoint is determined from the pH jump measured by a non-aqueous phase pH electrode. Peroxide value (potentiometric titration): the oil is dissolved in isooctane and glacial acetic acid (2:3), peroxides react with potassium iodide to form iodine, and the solution is titrated with sodium thiosulfate standard solution, with the endpoint determined from the potential jump.
